How do I connect nightbot to all my platforms at once

Unfortunately you can only connect Nightbot to an individual streaming account, this doesn't allow for multiple platforms at once.

what if you log in as twitch and open in a new window and log in as youtube

That'll work, however they will be different accounts and won't sync commands, spam protection, etc.
