Are custom commands automatic, or do I have to press the exclamation point then type the word?

Also, if I disable all default commands, will that disable my custom commands? Thanks

It depends of how you set them up, if their name is !command then you need to type !command, if their name is command then you need to type command.

Also, if I disable all default commands, will that disable my custom commands?

Disabling every default commands won't disable custom commands.
