Does anyone know the command to count the time I've been playing the current game on the stream? e.g.: xxxx is playing Rocket League for 1 hour and 25 minutes ago.

We only track the total stream uptime since that's provided via Twitch's API. To my knowledge there isn't a API that provides a timestamp when the game changes.
