Might be a bit of a dumb question, but is it possible to add commands which require several words to trigger a response? For example, rather than have !commands add Hi Hi (where typing Hi would result in Nightbot replying) would it be possible for me to add a command where the user must type ‘Hi Nightbot’ in order to trigger a response? Thanks in advanced for any help 
Not with default commands and variables, no. It could be done with a customapi but not by default.
